Baileys Cheesecake Recipe
To make a 10” Baileys Cheesecake Recipe – enough for 8 people or just yourself if it’s that kind of a day.
650g full-fat cream cheese
200g caster sugar
4 free-range eggs
150g white chocolate
300g greek yoghurt
200g Oreo biscuits
Pre-heat the oven to 130C/250F/Gas½.
To make the base blitz the whole Oreos – filling an’ all – in a food processor.
Press the crushed biscuits well into the base of a 10” round spring-form cake tin with the back of a spoon.
To make the filling start by mixing the cream cheese and caster sugar together until smooth.
Add the eggs one at a time, carefully mixing each one into the cheese and sugar.
Melt the white chocolate either over a Bain-marie or in a bowl in a microwave and then add the yoghurt.
Mix the white chocolate and yoghurt into the cheese mixture.
Add the Baileys and gently fold everything together.
Fill the cake tin lined with the Oreo biscuit base and cook for one hour until the cheesecake is set and lightly golden on top.
