There are moments when only KFC will do. These are moments possibly coloured by alcohol and the lateness of the hour, but there’s something about crispy fried chicken that soothes the soul even as it is taking the roof off your mouth. This Buttermilk Fried Chicken Recipe takes the principle of chicken in a box and makes it into something infinitely more sophisticated, delicious and finger-lickin’ than you could ever have imagined.
4 chicken legs, de-boned and each leg cut into three pieces
1/4 tsp freshly ground black pepper
1 tsp paprika
1/2 tsp cayenne pepper
1/4 tsp chopped fresh rosemary
1/4 dried oregano
1/2 tsp chopped fresh thyme
1/4 tsp chopped sage
250gs plain flour
1/2 tsp paprika
1/2 tsp cayenne
1/2 tsp garlic powder
1/2 tsp onion powder
Freshly ground black pepper and salt to taste
Mix all the ingredients together and marinate the chicken in the mixture in the fridge for 24 hours.
When ready to cook the chicken – make the seasoned flour by mixing all the ingredients together.
Coat the chicken in the seasoned flour.
Deep fry at 180C until golden.

Mix the following ingredients together:
1 small carrot (grated)
1/2 red onion (thinly sliced)
1 small pickled chilli
1 pinch chopped parsley
2 spring onions (thinly sliced)
100g red cabbage (thinly sliced)
Juice of a 1/4 of a lime
Salt and freshly ground black pepper to taste.
