Grains & Greens with Maca & Almond Dressing

This gorgeous salad is a generous bowlful, bursting with goodness.


Ingredients, (serves 2)

100g broccoli (blanched)

50g cooked quinoa

20g cooked freekeh

20g cooked amaranth

6 spears blanched asparagus

1 diced avocado

100g washed pousse

20g washed watercress

10g flaked almonds toasted

40g lemon vinaigrette

100g almond maca dressing


Thoroughly combine all the salad ingredients


Next, make the Almond Butter for the dressing:

250g whole blanched almonds

Roast the almonds in the oven for 10 minutes at 180 degrees until lightly browned

While they’re still warm, blend the almonds together until they’re creamy


Then make the Lemon Vinaigrette:

1 teaspoon finely grated lemon zest

4 tablespoons freshly squeezed lemon juice

2 teaspoons sugar

1 teaspoon Dijon mustard

1 teaspoon fine sea salt

Freshly ground black pepper to taste

5-6 tablespoons extra virgin olive oil


Thoroughly combine all the ingredients


Almond & Maca Dressing

200g almond butter

20g maca powder

50g agave nectar

200ml water

500ml rapeseed oil

200ml white balsamic vinegar

Season with sea salt & freshly ground pepper


Thoroughly combine all the ingredients



Toss the salad ingredients in the lemon vinaigrette

Drizzle the almond & maca dressing over the salad

Add the toasted almonds
