Make Your Own ‘Best Burger In London’


Just to show how simple excellence can be, we thought we’d share our recipe for what one of our guests kindly described as ‘the best burger in Soho if not the whole of London’. It’s just a few ingredients, cooked really well.

The Balans Infamous Burger (for one)



Olive Oil

8oz 100% Scotch Aberdeen Angus beef

Sea Salt

Freshly Ground Pepper

Crisp gem lettuce

Fresh beef tomato

Thin slices of red onion

Dill pickle

Crisp smoked maple bacon

Red Leicester cheese

A Brioche-style bun lightly toasted on the chargrill


Drizzle each patty with a little olive oil & place on to the chargrill until nicely charred for 6- 8 minutes. Sprinkle them with a pinch of salt and pepper & then turn over the patty. Lay a slice of Red Leicester cheese on top so it starts to slowly melt. Cook for another 6- 8 minutes.

Layer the burgers in the toasted buns starting with mayonnaise, tomato, lettuce, then the burger with the melted cheese, followed by the bacon and a slice of dill pickle.

Serve with fries and enjoy!
